Highlight: Organic celeriac (Apium graveolens var. rapaceum) is a root vegetable with a subtle celery-like taste and nutty overtones, the root vegetable version of celery if you like. This delightful flavour profile makes it a great addition to soups and stews, it is also delicious roasted or puréed.

Like burdock, celeriac discolours quickly once peeled and chopped so have a bowl ready of acidulated water and drop the cut pieces in immediately to prevent this. Lemon or vinegar may be added to make the water slightly acid.

Nutrient dense, celeriac offers water-soluble vitamins B and C to soothe the nerves and support the immune system, vitamin K for bone health as well as calcium, phosphorous, potassium, iron and zinc. Thought to have originated in the Mediterranean regions it was even mentioned in Homer’s Odyssey. It is now also grown and enjoyed in both Northern Europe and North America.
