Highlights: Local kale (Brassica oleracea) is a member of the cabbage family and is similar to collard greens that are so much part of US Southern Cooking.

Dark green leafy veggies are rich in fat-soluble chlorophyll which supports production of red and white blood cells. Chlorophyll also assists in general detoxification, removing cadaverine and putrescine in the body which present in bodily excretions as a foul odour so it acts as an internal deodorant. The high-fibre content of local kale also assists in removing toxins, excess cholesterol and other waste products from the digestive tract.

Like other Asian leafy greens organic local kale is mineral rich with calcium, potassium, copper and manganese and rich in carotenoids, water soluble vitamin complexes B & C, and Vitamin K1. Low in calories, but high in fibre it is excellent for those suffering from metabolic syndrome and diabetes type-2. Popularly used for juicing, it can also be massaged to eat raw in salads of stir-fired and added to stews or even grilled and drizzled with extra virgin olive oil to improve bioavailability of the fat-soluble antioxidants.
