Highlights: This Taiwanese organic preserved beancurd has a mellow, umami flavour characteristic of traditional fermentation techniques. Traditional fermentation of soy beans converts beneficial minerals into more bioavailable, soluble forms so that the calcium, iron, magnesium, potassium, selenium, and zinc from the beans and rice is more easily absorbed in the gut. Vitamin content is also increased, particularly that of thiamin B1, niacin B3 and biotin B7, making this a really valuable food for the nervous system.
During the process the aromatic amino acid Tyrosine is produced which is thought to increase production of the neurotransmitters dopamine, adrenalin and norepinephrine in the body. These may help to improve memory and performance in stressful situations.
Fermented soy contains more protein than unfermented soy making it a better protein substitute for vegans and vegetarians.
