Highlights: Shiitake mushrooms (Lentinula edodes) 香菇 Xiāng gū are used as medicinal foods and have been used in traditional medicines in China, Korea, Japan and Eastern Russia for their anti-cancer and immunomodulatory properties.
Mushroom cultivation is thought to have begun during the Song dynasty ~11th century in the Qingyuan 庆元县region (Lishui, Zhejiang, China) There is even a temple dedicated to Wu San Kwung who is said to have discovered the ‘beat and soak’ principle when chopping logs. Shiitake mushrooms grow on hardwood logs and he found when he beat the logs with his axe, more mushrooms would grow.
These shiitake mushrooms are certified organic, meaning water is from a pure source, they are grown without artificial fertilisers or pesticides, and no booster like urea is added, so the taste and smell are very natural. They add a delicious umami flavour to your stir-fries with broccoli, choy sum or even your 米粉汤
