Highlights: Snow peas (Pisum sativum var.) 荷兰豆 Hé lán dòu or mangetout peas, as the name implies are a delicious peas where the thin pod walls mean you can eat the whole thing. They are suitable for stir-fries and often appear in Chinese dishes, so are also known as Chinese peas.

A member of the bean family or legumes, the snow pea is rich in water soluble vitamin C, B vitamins including folate (B9) and fat-soluble carotenoids pro-vitamin A, lutein and zeaxanthin and vitamin K. As well as these beneficial antioxidants they are also rich in phytosterols, especially ß-sitosterol which are thought to help lower cholesterol levels. Available minerals include iron, calcium, copper, zinc, selenium, and manganese.
