Highlights: We have another Andean superfood back in the shop! The Yacon (Smallanthus sonchifolius) 雪莲果Xuě lián guǒ is grown this time up in Malaysia, so is really fresh. This tuber, also known as ‘Peruvian ground apple’ and its prebiotic fibre, is very helpful in modulating metabolic syndrome and reducing elevated cholesterol and triglyceride levels.

Related to sunflowers and a member of the daisy family Asteraceae, yacon tastes a little like sweet jicama or yam bean which belongs the the legume family Fabaceae or even like sweet water chestnuts. That sweetness is made up mostly of short-chain fructooligosaccharides, with small amounts of sucrose, fructose and glucose.

Most of the sweetness is bound with inulin, another prebiotic which means it remains undigested until it reaches the large intestine where it feeds the gut bacteria. These prebiotics stimulate the colon bacteria to produce an array of beneficial end-products which improve digestion and enable better nutrient absorption in the gut while reducing bloating, constipation and ulceration.
