Highlights: Delicious organic Spanish raw almonds! Native to the Middle East the almond tree (Prunus dulcis) was naturally was introduced to the Mediterranean region. Spain now produces 13% of the world’s almonds, mostly from the regions Andalucia and Valencia.

Almonds are loaded with antioxidants, mostly concentrated in their brown skin which protect against cell destroying damage from free-radicals which cause cancer, stroke and cardiovascular disease. The flavonoids quercetin, catechin, epicatechin and kaempferol  in combination with vitamin E content help prevent the oxidation of LDL (bad) cholesterol. Their quercetin/kaempferol content is equivalent to broccoli, while their catechin/epicatechin content is similar to brewed black or green tea.

For bioavailability, soak the almonds overnight and throw the soaking water before use. They may be blended to produce almond milk, and ground to produce almond butter, flour or with the addition of sugar and eggs, marzipan. The origin of marzipan is attributed to Lübeck, where bakers were  ordered to create a replacement for bread during a 15th century famine.
