Mace is the red fleshy sheath or aril surrounding the nutmeg seed. Togther they are in inner part of the fruit of Myristica fragrans, which as the name suggests has a wonderful sweet, woody fragrance. Originating in the Moluccan Islands of Indonesia it is now grown in other tropical regions such as parts of India, Sri Lanka, Malaysia and the Caribbean.

Mace is perfect where nutmeg would be considered too heavy. Delicate dishes of white fish such as sole, chicken, egg custards, cream soups, root vegetables, fruit and anything with a tart flavour. Where nutmeg adds depth, mace adds a floral touch.
