Old cucumber (Cucumis sativus) 老黄瓜 Lǎo huáng guā are cucumbers that have been left on the vine to mature. The outer skin is yellow to golden-brown in colour and has a leathery texture. The inner flesh is a pale white-green similar to young cucumbers. They have a mild flavour and are wondrously complemented by dried seafood, pork ribs and red dates when making soup

With organic cucumbers, eating the skin is actually beneficial as it contains excellent fibre, iron, pro-vitamin A and vitamins B6 and C. It is known as a cooling soup with a mildly diuretic effect ideal for hot weather and is touted to offer anti-aging qualities.
