Highlight: Organic Tong Hoe 茼蒿 garland chrysanthemum (Glebionis coronaria) immediately evokes steamboat and Chinese New Year gatherings. It is a delicate leaf which does not benefit from overcooking.
It is widely available in China, where it may be used in hotpots and stir-fry dishes. The Japanese call it Spring chrysanthemum (Shingiku) and use it in nabemono, the Koreans use it in soups and as a banchan dish, while in Crete the tender shoots may be eaten raw or steam in Greek cuisine.
In TCM the properties moisten the lungs and strengthen the liver. It’s slightly bitter astringent flavour is good for reducing phlegm, calming the nerves balancing the qi allowing better sleep.
